We have used both types and think conical burrs can produce a high-quality grind, just like flat burrs, but their flavor profiles may differ at the extremes. When assessing a range of flavor profiles, extending from a rich, chocolatey mouthfeel to a bright, clean, and tea-like taste, it's notable that flat burrs generally position themselves closer to the cleaner, more acidic end of the flavor spectrum, while conical burrs tend to fall on the opposite end.
